
Essex-Grown Yellow Peas Hummus & Organic Seeded Cracker.
The infamous Orangery hummus is a dish worth celebrating. Entirely plant-based and perfect for sharing, it has a story all of its own. Made from Essex-grown yellow peas, soaked overnight to ensure the smoothest dip, then cooked gently until soft, sweet and full of character. For a creamy finish, it is whipped whilst warm with a drizzle of olive oil, a pinch of salt and a sprinkle of lemon zest for a luxurious, nutty flavour.
To enjoy the dip, it is served with homemade organic seeded crackers made from Essex-grown seeds, rolled paper-thin and slow-baked until toasted and deliciously crisp, topped with a light seasoning. While the hummus and crackers make an elegant snack alone, they sit perfectly complemented with the farm-fresh pesto made from herbs picked from the hydroponic farm each morning, pounded slowly with oil and salt to reveal every bright, grassy note. The plate is complete with peppery radish for freshness and bite, perfectly showcasing a farm-to-table dish for sharing or indulging alone.

Beetroot salad, made the Orangery way
For a sharing platter, pair the yellow-pea hummus dish with the deliciously sweet and vibrant beetroot salad. Seasonal Heritage beets are tossed together with sliced Braeburn Apples from Kent, salad leaves grown in-house from the Orangery Farm, and garnished with walnuts for a blend of nutty, sweet, and sharp flavours. Taste the difference in fresh, local produce, grown without chemicals and less miles between the farm and the fork, through this refreshing plate that transforms what a mere ‘side salad’ can be.
